Tim Hillock 'La Cósmica' Chenin Blanc 2022

The passion project of Tim Hillock, a young winemaker whose parents started small family farm on the Kasteelberg in 2009. The cellar space is shared with Donovan of RALL wines, who you may remember from our previous South African tasting flight! Tim takes a very hands-off approach to his winemaking, with the goal of allowing the grapes and their terroir speak for itself.

Varietal: 100% Chenin Blanc

A single vineyard site, planted in 1988 at the foot of the Kasteelberg mountain, farmed by Tim Hillock's neighbor. Grapes are hand-harvested at dawn into small crates and driven to the cellar by tractor. The grapes spend a few hours in the cold room after which they are whole-bunch pressed to a settling tank. The next morning the juice is transferred to a 2606L foudre where natural fermentation occurs. The wine spends 11 months on the lees.

Tasting Notes: Notes of pear, peach, talcum powder and some yeasty complexity on the nose. The palate has good fruit density, well-integrated acidity, and a gently savoury finish. Understated and harmonious, some light pithiness lending texture.
