Varietal: 100% Chardonnay
40+ year old vines from 1er Cru vineyard "Les Fourneaux" (French for "furnace" due to its exposure to full summer sun). Fermented and aged 12-18 months on lees in stainless steel, with 15% in new and used oak barrels.

Tasting Notes: Pale yellow with gold reflections in the glass with a nose full of pear, yellow apple, and meyer lemon. Fresh yet rich on the mid-palate, with citrus blossom and green apple flavors. A salty minerality and a clean finish is present thanks to the Kimmeridgian soils of this 1er Cru that balance out perfectly the ripe fruit accents.

About Paul Nicolle: The domaine was originally created by Paul Nicolle in the 1950s, and was then revived by his grandson Charly many decades later. Managed by Charly Nicolle and his wife Lucie Thieblement, who used to be a chef at the Cote Saint Jacques, a nearby Michelin starred restaurant. The two met when Charly was delivering wine, and years later Lucie is now working side by side with Charly at the winery.
