Description

Varietal: 100% Chardonnay

Sourced from Chassagne-Montrachet in the Côte d'Or of Burgundy. The vinification is done in the traditional Burgundian style, with fermentation taking place in small oak casks. The wine is aged in Allier oak.

Tasting Notes: Two plots in Les Voillenots, with 35 and 50 year old vines. Medium depth of fresh yellow in colour. The bouquet comes across as refined after the explosive Mâcon. Mostly about the fruit, just a little biscuit, and certainly adequate tension. This works very well, and has impressive length. François notes the good water supply here. About Domaine Francois Carillon: The Carillon family Domaine has a rich winemaking history dating  back to the 16th century as the polycultural and livestock breeding farmland of Jean Carillon. After the First World War, Louis Carillon replanted the entire estate in order to focus solely on viticulture. In 1988, François began to oversee the estate alongside his father and brother, Jacques, until the estate was split between them in 2010. Since establishing his own wine estate, François has become a renown reference in Puligny-Montrachet for his refined, elegant, and timeless wines.
